Wonderful Griddlecakes!

Hubby is a wonderful cook. And one of his specialties is Griddlecakes (pancakes). The recipe he uses is from a 1943 edition of Woman's Home Companion Cook Book which belonged to his Grandmother.

Griddlecakes

1 1/2 cp Flour
3 1/2 tspn Baking Powder
3/4 tspn Salt
3 TBLSPN Sugar
1 egg, beaten
1 cp Milk
3 TBLSPN Shortening, melted
Water - just a dab

Sift together flour, baking powder, salt and sugar. Combine egg, milk and shortening (slightly cooled). Pour liquid into flour mixture. Stir just enough to moisten the dry ingredients. DO NOT OVERBEAT! Add a little less than 1/4 cp water to slightly thin batter. Bake on a hot griddle. Serve slathered in butter and syrup or honey or jam.

** Fruit (chopped) may be added . Increase sugar to 1/4 cp if adding fruit.

{patiently waiting for her griddlecake}

I love the sight of a man who knows his way around in the kitchen. My own darlin hubs knows his way too..the way to the fridge and the coffee maker! lol Sadly, that is not one of his interests, but I love him anyway. lol

The griddlecakes look perfect! Light and fluffy, and full of that old time flavor that has been processed right out of the "just add water" mixes.

I've got a homemade recipe, but am going to have to try this one! Thanks so much for sharing it with us!

I meant to ask what your dish pattern is? It is SO festive, and I imagine, perks you up on the darkest days. .and besides, that, it looks like Halloween! lol

Thanx Suzie! We like them for the same reason -Festive!
My dishes are made by Libbey. I think the pattern was Fiesta (?). Can't find it any more but I know they make a similar pattern called Latino Flora.

Sounds yummy. My 17 yr old son is the cook at my house. He makes a mean oatmeal pancake. In fact he cooks supper lots of nights. Lucky are us women when a man shares in the cooking.
